History
The paternal branch of the Vialade family is originally from Spanish Catalonia. Tortora Vinos represents the return to the origins of the Hispanic family through a knowledge of winemaking dating back several generations.
Geography
Wines made from this blend come from the vineyards of La Mancha. La Mancha is a vast plateau at an altitude of 800m at 200km south of Madrid. The climate is very hot almost dry. The rains are mainly winter. La Mancha usually fears downy mildew only once a decade!
Vineyard
All vineyards are organic. The yield is 60hL per hectare. The Airen is grown in traditional culture of La Mancha. Small vines head pruned are planted in widely spaced squares. Verdejo is conducted in the cord royat trellised.
Grapes
The Airen, late variety of La Mancha brings freshness to this wine, the Verdejo brings the powerful aroma, almost muscat taste.
Vinification and aging
The grapes are harvested mechanically and then destemmed at the reception. Cold maceration pre-fermentation takes place before a careful racking. Fermentation at low temperature gives the fruit and character of this wine. Throughout the vinification and aging, the wine is protected with nitrogen. It retains all the aroma of flowers and fruit.
Tasting and gastronomy
The color is light yellow with green highlights. The nose is intense with notes of roses, fresh grapes of exotic fruits and white flowers. Mouth full and sweet, is typical of wines from this region.
Serve as an aperitif with salty sweet glasses, gazpacho, Asian or even fruit salads.
Serving temperature: 8-10 ° C.
