Geography

The wines of Le Pavillon de Gaujac blend comes from two vineyards with climatic condition well adapted to organic farming. La Mancha with its extremely hot and dry climate only fears Downy Mildew once or twice per decades. In Languedoc, with the dry Mediterranean climate, the vineyards have low diseases pressure.

Vineyard

All the vines are organically grown. The yield is 60 hl per hectare. The Airen is cultivated in the traditional way of La Mancha : small vines head pruned at low density. The Sauvignon is cultivated on guyot on trellis system with 3 wires.

White grapevarieties

The Airen late grape variety of La Mancha brings the freshness to the wine. The Sauvignon brings the citrus notes to this blend.

Wine-making and maturing

The grapes from organic agriculture are mechanically harvested and then destemmed on arrival. The pre-fermentation cold maceration develops aromas of white fleshed fruit. The low temperature fermentation gives this cuvee character and fruit. During all the wine making process and the aging the wines are protected by nitrogen. That permits to preserve all the freshness and the fruitiness all year long.

Tasting and food-pairing

Serving temperature: 8-10°C. This fresh wine opens onto aromas of stone fruit such as peach, with a few floral notes.

Serve as an aperitif, with cold meat or goat cheese.
